Baking...Blueberry Muffins

Hello everyone!
I thought I would share a lost recipe of mine...blueberry muffins! I used to make them quite often.
This week I baked 44 of these muffins for my little sister's bake-sale. I'm proud of her, she managed to sell them all in 2 hours!


















The reason why I love these Muffins so much is, because they are light, fluffy and work perfect as either a breakfast, a snack or a dessert. I don't know why I didn't bake these for more than a year...I assume I never made time to make them.

So anyway lets get started...


The recipe is from:
Allrecipes Blueberry Muffins






Prep: 15min   Bake: 25min  Ready In: 40 min
Servings: 8 yummy Muffins!!


Ingredients:


1 1/2 Cups flour
3/4 Cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 Cup vegetable oil
1 egg
1/3 Cup milk
1 teaspoon vanilla extract
1 Cup blueberries


Crumb topping: ( It almost makes enough for 16 Muffins)
1/2 Cup sugar
1/3 Cup flour
1/4 Cup butter
1 1/2 teaspoon ground cinnamon


-Preheat oven to 400 Fahrenheit or 200 Celsius. Grease muffin cups or line with muffin liners.

-Combine flour, sugar, salt and baking powder.
Place the vegetable oil into a 1 cup measuring Cup then add the egg and enough milk to fill the cup.
It is optional to add in the vanilla extract, personally I love it with.
Mix this with the flour mixture. Fold in blueberries. Fill muffin cups almost to the top, and sprinkle with the crumb topping mixture.

-To make the crumb topping... Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

Then bake for 20 to 25 minutes in the preheated oven, or until done.
